WHY Dirty spoons = dirty counters. Paper towels lead to methane in landfills. We will reduce methane emissions by using a spoon rest.

HOW When we're cooking with a utensil, put a spoon holder on the counter. Place the utensil on that. Give the rest a quick rinse after cooking. A jar lid works as a rest too.

"But some of us have local farmers who make butter to support!... Am I wrong to think getting butter from a few miles down the road is better [than imported oil]?

Our Answer:
The recommendation to choose oil over butter comes from some findings that go beyond where the final product ships from. The biggest source of emissions considered comes from the cultivating of the main ingredients of the two options. Dairy, the key ingredient to butter, just happens to have a much bigger footprint than plants/seeds, the main ingredient to oils. 

Some of the main contributors to dairy farms' emissions that plant farms don't have include food that's farmed, packed, and shipped to feed the cattle, gases given off by the cattle, manure, both of which are methane rather than CO2 — a ghg far more potent than CO2. All of these combined usually have such a higher impact than the growing of plants for oils, that it justifies shipping the oils. 

In one study that compares oil vs butter, they took smaller dairy farms into account and actually doubled their impact because smaller farms tend to have more inefficiencies. 

I hope this makes sense and sheds some light on the thinking behind the recommendation. Certainly, for other things, where we have the option to choose something from a local farmer or farther away, and the choices are between the same product, like two options for cow meat, then we should certainly choose the local farmer.
